Making sweet martabak (moonlight) often fails or doesn't nest optimally? Have you ever asked why your brother selling martabak is always successful? Of course there are tips and tricks! In this video I share the secret to making sweet martabak with Teflon at home, just follow the steps and it is guaranteed to be 100% successful.

Teflon Martabak Recipe

Ingredient 1:
225 gr medium protein wheat flour
20 gr cornstarch / tang mien / tapioca
30 gr granulated sugar
250 ml water
1 egg
¾ tsp baking powder

Ingredient 2:
50 ml water
¾ tsp baking soda
2 tbsp pandan / vanilla flavoring / according to taste
Sugar to taste

Toppings (according to taste):
Butter / margarine
Sweetened condensed milk
Roasted sesame

1. Make martabak dough. Mix flour, cornstarch, sugar and water. Stir using a mixer until all ingredients are combined.
2. Add eggs and baking powder, then mix well
3. Let the dough rest for at least 1 hour
4. Divide the mixture into two, for vanilla and pandan
5. Heat the Teflon on medium heat
6. For the vanilla mixture, mix baking soda with water, stir well. For the pandan mixture, combine baking soda, water, and pandan flavoring, stir well
7. Add the baking soda mixture and vanilla flavoring to the first mixture, stir well. Add the baking soda mixture and pandan flavoring to the second mixture, stir well
8. Pour the vanilla mixture onto the Teflon, spread the mixture so that it sticks to the edges of the Teflon
9. Wait until the bubbles rise, reduce the heat a little
10. Sprinkle granulated sugar on top to help the bubbles burst
11. After nesting, cover the cooking mixture until cooked and the top is not sticky
12. Pour the pandan mixture onto the Teflon. Cook like the first dough
13. After the martabak is cooked, immediately spread butter all over the surface
14. Split the martabak in half
15. Sprinkle with grated cheese, sesame seeds and sweetened condensed milk
16. Stack the martabak together, then cut it into several pieces
17. Sweet Martabak is ready to be served

The Secret to 100% Success! Home Cook's Teflon Sweet Martabak (Indonesian Pancake) Recipe

Sweet Teflon Martabak Recipe

Ingredients 1:

1. Make the Martabak batter. Combine flour, cornstarch, sugar, and water. Mix with mixer until all ingredients are well-incorporated.
2. Add the egg and baking powder. Mix well.
3. Let the batter rest for at least 1 hour.
4. Divide the batter into two, for Vanilla and Pandan flavors.
5. Place the Teflon on medium heat.
6. For the Vanilla-flavored batter, combine the baking soda with water and mix well. For the Pandan-flavored batter, combine the baking soda, water, and Pandan essence and mix well.
7. Add the baking soda mix and Vanilla essence to the first batter and mix well. Add the baking soda mix and Pandan essence to the second batter and mix well.
8. Pour the Vanilla-flavored batter into the Teflon. Swivel the pan so the batter sticks to the edges of the Teflon.
9. Wait until the bubbles rise. Then, lower the heat.
10. Sprinkle some sugar on top to help the bubbles burst.
11. After the surface is covered with holes, cover the pan and let it cook until the surface is not sticky anymore.
12. Pour the Pandan-flavored batter into the Teflon. Cook just likes the first batter.
13. After the Martabak is cooked, spread some butter on the entire surface right away.
14. Cut the Martabak into two.
15. Top with grated cheese, sesame seeds, and condensed milk.
16. Stack the Martabak on top of one another and cut into several pieces.
17. Sweet Martabak is ready to serve.
