Delicious Chewy Cheese and Chocolate Sweet Martabak // Cheese And Chocolate Thick Pancakes

This snack is really the snack that can really make me go out at night to buy a box of true pleasures 😆😆 or if I'm feeling lazy, order a motorbike taxi 😅 there is a martabak seller near my house which is really delicious. The texture is chewy, similar to Bika Ambon, soft and not bitter (due to too many developers). It's really delicious... I've tried it before and I can't find anything similar 😑 that's really a genius who made the recipe. Yes, even though it can't be exactly the same, this recipe is not bad... this recipe is a combination of various recipes circulating on IG, YouTube, Cookpad. I use tapioca because I like the chewy texture similar to Bika Ambon. I follow the method that I use Mrs. Indriani in her culinary business book series. First, beat the dry ingredients with egg yolks and water until the dough is like a pliable dough, let it sit for 1 hour, add baking powder and eggs, let it sit for another 10 minutes, then use the final baking soda solution when it's ready to be baked. Don't forget that the pan has to be hot (but the heat tends to be low), you can use a water test. As for the roasting method, I follow Yackikuka's method. because I don't have a thick frying pan, so I really have to work around putting 'something' between the frying pan and the stove so that the heat doesn't get too high. let's try it 😋😋✌


CHOCOLATE CHEESE MARTABAK RECIPE
For: 2 pans of martabak (22-24 cm)

Martabak Dough
225g medium protein wheat flour
25g (3 tbsp) tapioca flour
30g (2 1/2 tbsp) sugar
1/4 tsp salt
1/8 tsp vanilla powder
250ml water
1 egg yolk

1 egg
1/2 tsp baking powder

1/2 tsp baking soda + 2 tbsp water (divided by 2)

1/2 tsp chocolate paste (for chocolate martabak dough)

Stuffing
30g (2 1/2 tbsp) sugar (for sprinkling when cooking) (for 2 martabak)
2-4 tablespoons butter (for 2 martabak)
50-75g grated cheese (for 1 martabak)
25-50g dark cooking chocolate compound, grated (for 1 martabak)
sweetened condensed milk

CHOCOLATE CHEESE MARTABAK (CHEESE AND CHOCOLATE PANCAKE) RECIPE
Makes about : 2 pans of martabak (9inch)

Ingredients:
Martabak Batter
225g (1 3/4 cups) all purpose flour
25g (3 tbsp) tapioca flour
30g (2 1/2 tbsp) sugar
1/4 tsp salt
1/8 tsp vanilla powder
250ml (1 cup) water
1 egg yolk

1 egg
1/2 tsp baking powder

1/2 tsp baking soda + 2 tbsp water (divided to 2)

1/2 tsp chocolate paste (for chocolate martabak batter)

Filling
30g (2 1/2 tbsp) sugar (for sprinkle when the batter is cooked)
50-75g grated cheese
25-50g dark cooking chocolate compound, grated
sweetened condensed milk
